I recommend the gutless method for field dressing. This fast easy way eliminates coming in contact with any of the guts. If you choose to harvest liver and heart, then obviously this process wont work. In short, cut down the spine and open animal from the top. From there you will have access to shoulder and hind quarter joints, and loin products. This method is faster, easier, less mess and hassle, and it get the meat cooling down at a faster rate.

I tried this process with a fair amount of success although I think maybe I did not allow enough time for the water to evaporate enough. I poured into two small containers, the first looks right, the second, which would be the bottom of the barrel had differences in texture that were isolated bubble like in appearance. This again suggests that I pulled the boiling tallow off the burner a little prematurely. The clothe used for straining was applied to my knife to preserve it and I guess if it does not smell in the morning then I did something right. BTW, this guy has top notch info in his other vids.

I tried this process with zero success. Given that I have a great deal of respect for this guys knowledge, I therefore have to conclude that my lack of success was that of user error. I put the brass brush and drill to the hide and it did not even faze it. I guess I am going to have to do it the hard way unless new information comes along to correct my initial efforts.
