Default Holiday Food for Diabetics

This is something I meant to try out and finally did and it worked.

Whatever pecan pie recipe you use, you can make use an alternate syrup to 'set' the pecans, the kind you find in the coffee isle that is sugar free and clear, vanilla flavored. Worked like a charm, didn't know it would cooperate same as Karo which is of course loaded with sugar.

Same with cranberries: if you want to make jellied cranberry sauce, melt down sugar free cherry jello into a pot of boiled whole cranberries (boiled 10 minutes first) and then cool it and set it, works great.

Still has sugar, and the sugar alternatives have sugar alcohol, so a diabetic cannot eat just a ton of this, but it's better than nothing.

Also, best to avoid aspartame (Nutra-Sweet) or 'Splenda' on an every-day basis, it is basically turning to formaldehyde in your bloodstream. But for a unique occasion it will work.
